3 gigs and 2 rehearsals this weekend. Time is scant. And yet I felt like working on something and thus, for what it is worth, here is today’s offering.
And some (sort of) junk food. Bisquick Chicken Pot Pie. Why not total junk food you ask? I mean Bisquick and Campbell’s soup… these are considered ‘junk food’ in my family. True, but I boosted the frozen stuff with some veggies my boyfriend grew last summer and used my own homemade bisquick. It is totally worth making your own bisquick because you can use different flours and really find a mix that tastes great. My own version uses Graham Flour, slightly sweet, nutty and very tasty.
Doesn’t that look tasty. If you want to make your own Bisquick, here’s my recipe. Adapted from the More for Less Cookbook with some internet tweaks. Enjoy:
Sift together 3 times:
3 1/3 cups All Purpose Flour
1 2/3 cups Graham Flour**
3 T. Baking Powder
2/3 T Salt
3/4 t. Cream of Tartar
1/8 c. sugar
Cut in until consistency of cornmeal:
1 c. vegetable shortening
1 c. dry milk powder
Store in covered container at room temperature. Will keep for at least 6 months.
** The flour needs to total 5 c. and 2/3 of that amount must be AP Flour for the product to work. For the other third, add what flour you like. I like Graham because it makes the Quiche really crusty. Lish!
